Jeera Aloo

What you need: 

1 tablespoon cumin seeds
oil, as needed
5 medium potatoes, boiled and diced
1/2" piece fresh ginger, finely chopped
1 tablespoon turmeric powder
cayenne pepper, to taste
2 tomatoes, finely chopped
1 onion, finely chopped
1 teaspoon amchur powder
1 jalapeno pepper, diced
2 tablespoons lemon juice

What you do: 

1. Saute cumin seeds in oil over medium heat for 30 seconds or until browned. Add the potatoes and stir until the seeds are about evenly distributed over the potatoes.
2. Add the ginger, turmeric, and cayenne pepper. Stir frequently, adding the tomatoes and onions.
3. Continue stirring, and add the the amchur powder and jalapeno pepper.
4. Add the lemon juice while stirring. Cook for about 2 minutes more and serve hot.

Ok so I did a slightly different version.

Mine is called DUM Aloo which I took a little of this recipe, another from showmethecurry.com, a third which I forgot what is was called and mixed them together... You know subtracted something from one added something form another and continued still I got the finished product you see in the picture.

*WARNING* Lots of Seasoning was used... but they are to die for. I made my 2 lb bash 4 days ago and I still haven't stopped eating leftovers and it's still good! Even cold (isn't that weird?).
