Jenny's One Cup Apricot Coconut Cake

What you need: 

1 cup dessicated coconut
1 cup chopped dried apricots
1 cup rice/soy milk
1 cup sugar
1 cup self raising flour

What you do: 

Combine ingredients. Cook in loaf tin for 40-50 minutes at 350F until top springs to the touch. You can also substitute other dried fruits for the apricots, or use a mixture of dried fruits.
