Kale Chips--a.k.a Seriously Addictive Snack!

What you need: 

1-2 big bunches kale, leaves chopped to chip sized pieces
1 tablespoon apple cider vinegar
1 tablespoon oil
coarse salt, to taste
1-2 tablespoons favorite seasoning blend (we love hot and spicy Spike)

What you do: 

1. Preheat oven to 350 degrees Fahrenheit.
2. Spread kale onto baking sheet. Pour the apple cider vinegar, oil and seasoning onto kale. Mix to coat all pieces.
3. Bake for 10 minutes or until crispy. Serve immediately!

SO HOW'D IT GO?

Never had kale before but tried these after seeing mostly good reviews. Decided to toss them in the oil and vinegar and salt and then put them on the pan. They came out great!  A little too salty, but I was eyeballing the salt. The only downside I can find is the after taste of kale is in your mouth for a while. If you don't like that taste, you probably won't like the recipe, but I do so I did!  Even if they were a tiny bit soggy in spots, if you eat them warm, they still taste fine.

Ok so I was excited to try these today as I would love a healthy snack that tastes like potato chips!

I must say that I didn't like that all that much.  First time they came out too soggy.  2nd batch 1/2 came out soggy and 1/2 came out just right.

However, the just right ones tasted good for a hot second and then the taste sunk in and I didn't not approve  lol

I'll stick to my baked chick peas instead.

These are good!  I do admit I was skeptical even though I really like kale.  If I eat a whole bunch's worth of kale chips, does it count the same as if I ate a bunch of kale, or does some of the nutrition go away during the baking?  I really really really want to count them in my daily vegetable count!  I'm definitely making these again, maybe an incentive to start a garden with kale!

I do like these chips, and they are super easy, and cheap to make!  My only dilemma was that they weren't vinegary enough for me, so I like to dip the chips in a small bowl of the apple cider vinegar.  If you are a fan of vinegar either add more or try my way, and if you don't like vinegar try the recipe as is and you may not even notice.

i added a bit too much oil and salt, so some of my "chips" didn't turn out too good, but the ones that did were EXCELLENT. very, very, very tasty. i just finished the batch i made now and am gonna make some more to share with my mom!

These are fantastic! A little sea salt, garlic powder, cumin, and nutrition yeast make 'em taste taste just like the ones at my local health food store but at a fraction of the cost ($8.00 for a tiny bag!) and three times the amount. So delicious. A real keeper.

I thought these were OK. Not great, but OK. I had a bunch of Kale that was almost past it's shelf-life and it was good for that but I wouldn't go out of my way to get kale just to make these.

These are SO good.  I love them.

I added some chili powder and garlic powder.  Delicious!

It is very easy to oversalt and over vineger these.  The parts touching the pan on the bottem were soggy, but the tops that were not were nice and crispy.  I  made them in the toaster oven and I was surprised as the crunchy ness of them.  They turned kind of brown in some places I think because of the vineger.  I think next time I am going to put oil/vineger/salt combo in a seperate container, and coat the kale there and then transfer after letting the leaves drip dry for a moment put them on the baking pan then bake them.

I haven't tried them in my 18 mo old yet, but he doesn't like vineger or any type of leafy grean so I doubt he would like them (though he does love to chew on the kale stems!), but I sure liked them.  I love kale anyway and these were great!  Kale is slowly turning into my favorite veggie, displacing broccoli and spinach which have  held the top spot for probably 10  years!
