Kale Chips--a.k.a Seriously Addictive Snack!

What you need: 

1-2 big bunches kale, leaves chopped to chip sized pieces
1 tablespoon apple cider vinegar
1 tablespoon oil
coarse salt, to taste
1-2 tablespoons favorite seasoning blend (we love hot and spicy Spike)

What you do: 

1. Preheat oven to 350 degrees Fahrenheit.
2. Spread kale onto baking sheet. Pour the apple cider vinegar, oil and seasoning onto kale. Mix to coat all pieces.
3. Bake for 10 minutes or until crispy. Serve immediately!

SO HOW'D IT GO?

Tried these out for the first time last night. I remembered seeing this whole "kale as chips" concept in some magazines around October 2009 (Good Housekeeping, maybe?). Anyway, it was about time I tried it.

I liked it with the apple cider vinegar, and my fiance had the cool idea to put the vinegar and oil in a spritzer bottle. I had bought him some travel jars and bottles for his paints, and he still hadn't used a tiny spritzer bottle, and it worked perfectly. He did not share in my glee in roasting the kale--he said they tasted like "burnt grass."

I put too much salt on but it was surprisingly good. It's definately different but tasty.

So yummy love these! With a bit of balsalmic vinegar instead of the vinegar and they are sweet. Kind of like salt and vinegar potato chips.

I wanted to add that because of this recipe, I decided to put kale on my pizza last night. It crisped up and was super awesome! What a nice crunch for a vegan pizza! My boyfriend saw me putting it on the pizza and looked a little skeptical, and I told him to trust me, it would be awesome. And it was.

As a side note: to keep the kale from falling off, I put it directly on top of the pizza sauce, under my tofutti cheese. This made it stick, and it still crisped up. (I learned this the hard way on the 2nd pizza, after it wouldn't stay put on the 1st!).

It WORKED, I'm Shocked!  so is everyone in my family, who all ate it (even my ridiculously fussy sister) like it was their last meal!
I'm impressed, and I see kale being the top of the grocery list alot more!

Kale is already salty, so beware! Go easy on the seasoning and oils

WOW! These things are awesome!!! I finally got it right... tried twice before, & could tell they were *gonna* be good; but my oven is small, & no matter how I played with heat settings or cook times, or how often I stirred them or turned the pan, I kept having like 1/3 of them delicious/ 1/3 burned/ 1/3 still soft & uncrispy... BUT THEN(!) I tried them in the dehydrator... OMG, kale heaven! Omni hubby is eating them so fast, I may not have time to get a pic... but they're really pretty, bright green & very crisp (I might just have to make some more, for photo purposes, right?!). They taste a little greener/ 'kaley'-er than the (successfully) roasted ones, in a very yummy way!  I think they taste even better than my best roasted ones; prob'ly more nutritious too... don't care though: would eat 'em all up regardless! I mixed the chopped kale in a large bowl with vinegar/ oil/ homemade seasoned salt, then put 'em in the dehydrator for about 3 hrs, on highest setting (155 degrees). I will make these over & over, definitely... they are SO going to be a regular part of our road trips & movie nights, from now on... what a well-named recipe!

Kale, a vegetable I had never bought for myself (had eaten only a few times) before trying this recipe, is now a staple in my vegetable drawer.
