Kick-Ass Molasses Cookies

What you need: 

1 cup packed brown sugar
3/4 cup canola oil
1/4 cup molasses
3 tablespoons Ener-G egg replacer
2 1/4 cups unbleached all purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 tablespoons sugar

What you do: 

1. Heat oven to 325 degrees F. Mix brown sugar, oil, molasses, and egg substitute in a large bowl with an electric mixer on medium. You can also mix with a spoon, but it's better when it's really whipped up.
2. Stir in the rest of the ingredients except the vegan sugar. Make tablespoon sized balls of dough and roll in the sugar.
3. Place cookies 1-2" apart on ungreased sheet.
4. Bake for 13 to 16 minutes or until set (appears dry). Let cool for 1 to 2 minutes and place on wire rack or a plate is fine as well.

SO HOW'D IT GO?

these look really good! can you use applesauce for egg replacer in this?  i dont have the powder egg stuff... either that or flax seed. if someone could let me know how much to use (or applesauce or flax and water) that would be awesome!  also one last thing... after you roll them in the sugar, do you flatten them, or leave them in balls?  thanks! cant wait to try these!

I have made these twice.  The first time I was not sure how much powdered egg replacer/water to add.  The second time I added 1 T powdered egg replacer and 2 T water.  It worked out well.  Yummy cookies!
