Kielbasa Bake

What you need: 

1 (12 ounce) package vegan kielbasa sausage, cut into rounds (I use Tofurky Kielbasa)
5 small red potatoes or Yukon Golds, cubed or shredded
1/2 onion, diced
4 tablespoons margarine (I use Earth Balance)
1 clove garlic, minced
4 tablespoons flour
2 1/2 cups nondairy milk (I use soy)
1 (10 ounce) package vegan monterey jack, shredded (I use Follow Your Heart)
sea salt and pepper, to taste
3 broccoli crowns, diced
4 tablespoons bread crumbs

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Grease a baking dish. Boil kielbasa, onions, and potatoes in a big pot covered by 1-2" water.
2. Heat margarine and garlic in a sauce pan. Remove from heat and stir in flour. Return to medium heat and stir in milk.
3. Stir in the vegan cheese, and salt and pepper, to taste. Drain kielbasa, onions, and potatoes, and pour into prepared pan. Cover with sauce. Add broccoli. Mix it all together in the pan.
4. Cover with breadcrumbs. Put in oven for 45-50 minutes. You can tell it's done when it's all bubbling nicely and has a little bit of a crust.

This is outstanding! The only thing was that I added a whole lot more potatoes because it made a lot of sauce and the rest of the ingredients were drowning in it! Very, very tasty and my meat-eating family loved it!
