Korean Spicy Cucumber Salad

What you need: 

[u]Sauce[/u]:
1 inch leek, minced (about 1 tablespoon)
1 clove garlic, minced (about 1 tablespoon)
1 tablespoon fine red pepper powder
1 tablespoon sugar
1 tablespoon rice wine vinegar
dash soy sauce [u]Salad[/u]:
1/2 cucumber, thinly sliced
salt, to taste
pinch sesame seeds
pepper, to taste

What you do: 

1. Sauce: In a bowl, combine all sauce ingredient; whisk thoroughly. (Or prepare sauce in advance, its better that way.)
2. Salad: Place cucumber in a bowl and sprinkle with salt; let stand 10 minutes. Wrap the cucumber in a dry towel and squeeze out excess water.
3. Pour sauce over cucumber; toss to coat. Sprinkle with sesame seeds, then season with salt and pepper.

Awesome! We just picked a zillion cukes from our garden! Can't wait to make this!!

Yummy yummy yummy! I used 4 pickling cucumbers this time and did 4 times the ingredients... still left out the leek... I love this stuff  :)>>>

;)b I thought this was wonderful! I didn't have a leek so I omitted that and eyeballed the rest of the ingredients and it turned out perfect... Just the right spiciness... Yum 5 stars!

I fell like I should qualify that I gave this recipe 3 stars, but I give it the highest 3 stars possible. The recipe as is is wonderfully hot and spicy, counterbalanced by sweetness... but it's maybe just a little to sweet for my tastes.

I'll definately be making this again (cucumber and cayenne! I love it!), but with maybe less sugar or maybe some additional spices.
