Kristel's Flour Free Banana Muffins
What you need:
1 1/2 cups oatmeal
2 large bananas, mashed
1/2 cup sugar (I use organic)
1/2 cup apple sauce
1 tablespoon vanilla
3 tablespoons olive oil
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
dash sea salt
What you do:
1. Preheat oven to 350 degrees F. Grease or line a muffin pan. Mix all ingredients in a large mixing bowl.
2. When mixed thoroughly, spoon mixture into prepared pan. (I use the the silicone type, so no greasing was necessary.)
3. Bake 20-25 minutes, or until they pass the toothpick test!

I love this recipe. Its great for my son because we can just mix everything together! We only use about a tablespoon of sugar and we added nuts and...love them.
These worked out beautifully, I was really pleased. :) There are a number of things I like about this recipe: 1) oats keep longer than flour and are healthier for you, 2) the ingredients are cheap and I almost always have them and 3) they take no time at all to bake. I myself substituted the sugar with sorghum syrup (I might even recommend less sugar, they were very sweet!), and adding ground flax might be tasty, too. P.S.: Wait at least 45 minutes before eating them- they're VERY crumbly at first, but solidify well once cooled.

Another tasty addition would be to add 1/2 cup of shredded carrots, or some raisins. Yummy!
