Lazy College Kid's Super Chunky Salsa
1 can black beans, drained and thoroughly rinsed
1 can corn, drained and rinsed
1 can tomatoes with green chiles (like Rotel), NOT drained
1 tablespoons minced onion
Mix everything up in a bowl and let it sit for about 10 minutes so the flavors can mingle together. Serve it with chips or on a taco or in a burrito, whatever you want. I made some today and served it with some yellow saffron rice and it made a really good, hearty meal. I recommend using the chunky Rotel. If you don't like spicy, go for the mild Rotel. This recipe is so quick and easy and you can put it on a billion things.
