Leftover Almond Pulp Cookies

What you need: 

1/2 cup leftover almond pulp (from making milk or ground almond meal)
1/4 cup yacon syrup, agave syrup, or maple syrup-not raw
2 heaping teaspoons cocao or cocoa powder
1 to 2 tablespoon(s) pecans
1/4 teaspoon vanilla or 1/2 inch of a bean
coconut Flakes, for rolling

What you do: 

1. In a bowl of a food processor, combine almond pulp, yacon syrup, cocoa, pecans, and vanilla; process into a paste.
2. Roll mixture into 10 to 15 balls.
3. Place coconut flakes on a plate. Roll balls in coconut flakes.
4. You can totally eat it like this for an under-baked gooey brownie texture (great with coconut ice cream!) or dehydrate for 2 to 4 hours (flip half way through) and enjoy them in a firmer (and awesomely WARM) way. (I flatten mine to cut down on dehydration time and I like flat cookies.) So easy to make and the possibilities are endless!

I just made these cookies after starting to make my own almond milk. My husband and son could not get enough of them... I am just glad I didn't make a large batch because I would have eaten them all!


My three year old & I just made these & they are really good! I used walnuts & didn't have any coconut. We just mixed everything else together & ate it out of the bowl. The dessert did remind me of brownie batter, especially with all the walnuts I put in :) Yummy! Thank you for sharing a cookie recipe using almond pulp. Quick, easy & fun!


Pretty good.  I made these tonight when I was looking for something sweet and easy.  I used a maple-agave syrup blend and the flavor comes through pretty strong.  Next time I'll add a bit more cocoa and reduce the syrup.  I noticed it was a bit too wet for me.

I don't have a dehydrator (didn't see that part in the recipe my first read-through).  As mentioned, it can definitely be eaten straight away.  I put several in the freezer on a plate to firm them up a bit before enjoying (at least 1 hr or so). 

Also, I made these without a food processor - just stirred everything in a bowl.  I chopped the pecans before adding, of course.

I will make these again.  Thanks for posting!
