Lemon Garlic Pasta with Wasabi Sprinkles
8 oz linguine
2-4 garlic cloves
2 tablespoons olive oil
juice of 1 lemon
1/4 cup wasabi dried peas
your favorite vegan "parmesan"
salt and pepper to taste
In a food processor, grind 1/4 cup wasabi peas to a chunky powder.
Prepare pasta as directed.
While pasta is boiling, pour olive oil into a pan over med-low heat. Chop garlic (we use at least 4 cloves, but you may only want 2) and add to pan. Saute for 2 minutes. Add 1/2 of the lemon juice, a big pinch of salt and some freshly ground black pepper. Saute until garlic is soft (another 4-6 min).
Add drained pasta and the other 1/2 of the lemon juice. Remove from heat and mix until well combined.
Dish pasta and sprinkle with your favorite vegan parm (I like the Cheesy Sprinkles from this site without the onion and garlic powder). Sprinkle ground wasabi peas liberally over the top. Eat!
