Lemon-Pepper Cous-Cous

What you need: 

2/3 cup dry couscous
2/3 cup hot water
1 scallion, thinly sliced
1 (15 ounce) can low-salt garbanzos
lemon-pepper seasoning, to taste

What you do: 

1. Add the hot water to the couscous, and set aside.
2. When the couscous is ready (about 12-15 minutes), toss garbanzo beans with liquid in the microwave for about 20 seconds to heat.
3. Drain garbanzos, and pour the couscous over the garbanzos (or vice-versa).
4. Stir in the scallions, and add lemon-pepper.
I suspect that this would be even better with some steamed brocolli and carrots tossed in (the possibilities are endless), but this was the simplest of simple meals. I had 1/2 last night and the other half is beckoning to me from the staff room fridge.'

SO HOW'D IT GO?

I thought this was great, but I added some things.  I thought it could use some veggies so  I sauteed a sweet onion and some green bell peppers.  I made a double batch, so I used one can garbanzos and one can black beans.  I also used a lot of lemon pepper and some salt.

I highly recommend squeezing on a bunch of fresh lemon juice before serving.  Very fast and easy!
