Lemon Veggie Tortilla Wraps

What you need: 

3 tablespoons olive oil
1 potato, diced
1/2 green pepper, chopped
1/2 red pepper, chopped
1 tomato, chopped
1 onion, chopped
1 cup broccoli, cut into pieces
1/2 yellow squash, thinly sliced
1 teaspoon oregeno
1 teaspoon basil
1 teaspoon garlic powder
1 lemon

What you do: 

1. Preheat oven to 350 degrees F. Put olive oil in shallow baking dish. Add all veggies and spices, and stir.
2. Cut lemon in 1/2. Squeeze 1/2 the lemon over the veggies and cut the other 1/2 into slices and place in the veggie mixture.
3. Place in the oven and cook for 30 minutes to 1 hour (until veggies are tender and slightly browned).
4. Take out the lemon slices. Serve with warmed flour tortillas or alone as a side dish.
