Lemony Herb Fredo Style Raw Noodles

What you need: 

1 zucchini
1/2 lemon, juiced
1 teaspoon lemon zest
1/2 avocado
1 teaspoon fresh ground black pepper
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon basil (fresh if you have it)
1/2 teaspoon salt

What you do: 

1. Using a mandolin fitted with a shred attachment, slice the zucchini into noodle like strips and place in a bowl.
2. Add remaining ingredients to the food processor. Process until smooth. It should be very thick. This helps for the sauce to really stick to the zucchini, since the zucchini is slick in texture. But, you can add 1 tablespoon of water at a time if you would like it thinner.
3. Add sauce to noodles and enjoy!

SO HOW'D IT GO?

Made this in the summer for a quick side dish. I followed the directions as written and to me and the fam it tastes like guacomole and agreed it is not worth making again. I do like the idea of using veggie as mock noodles and am willing to try other recipes like this.

This came out really yummy!  You could use the sauce for other items as well.  I will definitely be making this again.  Oh, I didn't have thyme but it was delicious without it.

Delicious! The only complaint I have is that I thought there was a bit too much pepper, it was really spicy. Next time I'll use a little less. Delicious though!

This was really good and different. We didn't have zucchini so i made an unraw version with whole wheat pasta. I just let the pasta chill in the fridge for a few minutes. I doubled the sauce recipe and also added mushrooms and tomatoes. Delicious!

This sounds really good! I'm going to try this, just got a fancy veggie spiralizer for Christmas. Can't wait to try it out, I'll use this recipe.
