Lentil Oatmeal Raisin Cookies

What you need: 

2 cups whole wheat pastry flour
1 teaspoon baking powder
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon alls pice
1 1/2 cups sugar
3/4 cup vegetable oil
1 "egg" substitute
2 teaspoon vanilla or coconut extract
1 1/2 cups lentil puree
1 cup rolled oats
1 cup raisins or dried cranberries
1 cup dried shredded coconut
2/3 cup lentils

What you do: 

Preheat the Oven to 375 degrees Fahrenheit.
In separate bowls;
-Combine the Flour, Baking Powder, Saltand Spices.
-Mix the Sugar, Oil, "Egg",Extract andPuree together until thoroughly blended.
Add the Wet mixture to the dry, and stiruntil dough sticks together.Mix in the oats, coconut and fruit.
Bake for 10-15 minutes. I like to rotatemy cookies after 5 minutes.
---The Lentil Puree---
Take the 2/3 cup of rinsed lentils and2 cups of water, bring to a boil and letsimmer for 40 min. Puree in foodprocessor or blender if it has thecapability. I suggest doing this beforeyou begin baking as to minimize bakingtime.

SO HOW'D IT GO?

Just made these, will def be making them again Smile

I subbed applesauce, used banana for egg replacer and forgot to add the coconut, and they still came out well. I think they make a good healthy breakfast cookie. I used pureed red lentils (had bought the lentils in bulk from WHole Foods) and you can't taste them at all in the final cookie. My sweeteners were BlackStrap Molasses and Agave

Now I need to purchase some beets to make the vegan beet chocolate cake I've seen online, I hope that turns out well too...these pastries and cookies are a good way to get some lentils and beets into my diet while still indulging in desserts
