Lentil Spaghetti Sauce

What you need: 

1 cup onion, minced
2 cloves garlic, minced
1 tablespoon vegetable oil
1 cup dried lentils
2 cups veggie broth
5 1/2 ounces tomato sauce
4 ounces mushrooms, chopped
pinch oregano
pinch basil

What you do: 

1. Sauté the onion and garlic in oil until golden.
2. Add the lentils and broth. Simmer 30 to 40 minutes.
3. Add the tomato sauce, mushrooms and herbs. Simmer another 10-15 minutes.
Serve on pasta.

SO HOW'D IT GO?

This was so delicious and EASY to make! I served it over spaghetti squash.

I was looking for a different kind of pasta sauce and this fit the bill. Thanks for submitting!  I topped mine with parmesan (since I'm "THAT* kind of veggie) and red pepper flakes. Yum!
