Low Fat Bran Muffins

What you need: 

1 1/2 cups wheat bran
1 cup nondairy milk (I use soy)
1/2 cup unsweetened applesauce
1/2 banana, mashed
2/3 cup brown sugar
1/2 teaspoon vanilla
1/2 cup all purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries, raisins, or dried cranberries

What you do: 

1. Preheat oven to 375 degrees F. Spray muffin tins with cooking spray. Mix together wheat bran and milk and let stand for about 10 minutes.
2. In a large bowl, mix together applesauce, banana, vegan brown sugar and vanilla. Add in the bran/milk mixture. Stir in the flours, baking soda, baking powder and salt.
3. Fold in blueberries, or other add in. Fill prepared muffin tins, and bake for 15-20 minutes.

SO HOW'D IT GO?

I have made this recipe a dozen times at least. I use whatever fruit that I have on hand. Made pineapple, pumpkin, strawberry...the list goes on & on(LOL)! I try to eat 2 a day just because they are so healthy and  DELICIOUS(HeHe)!
You can't go wrong with only 1 gram of fat :)>>>

I have been meaning to say THANK YOU! I made these for the second time this month. I actually made these for my husband because I'm not a big fan of bran muffins....until now! These were so moist and nicely sweetened! I didn't put any extra fruits in the batter--actually forgot to get some each time. So so yummy!

These are sooo good! I made half of mine plain and the other half with lemon juice and blueberries!! I think I put too many blueberries in though but they were still good(I just kind of threw some in!!). Even my very non-vegan sister loved them! Also, I used oat flour instead of wheat flour and pureed silken tofu instead of the banana and applesauce. I used half a cup of the tofu with a smidge of extra water and they turned out perfectly!

These muffins ARE very good! Somehow I always manage to screw up everything I bake, but I didn't screw this recipe up. And considering how relatively little sugar there is in this recipe, it was pretty sweet and tasty. AND they are SO healthy!!!!! FIVE STARS!!!!!

these muffins are really good! The are much sweeter than I thought they would be which is a really good thing! A lot of times bran muffins taste like cardboard but not these yay! I actually forgot to put in the 1/2 cup of all purpose flour and they still turned out amazing and they are only 2 Weight Watchers points! Yay for a healthy low fat breakfast!!! :)>>>

These were AMAZING. I used sweetened applesauce instead of unsweet and threw in some vegan chocolate chips and cranberries due to a sweet tooth. Kind of ruined the low-fat deal, but they were delicious.

very yummy muffins! I added about 1 1/2 cups of blueberries and cranberries. I found I had to cook them a little longer about 25 mins, but they came out delicious!
