Low Fat Oatmeal & Raisin Cookies

What you need: 

1 cup apple sauce
1 cup turbinado sugar
1/2 cup sucanat
3 teaspoons Ener-G + 4 tablespoons water (2 egg replacers)
1 teaspoon vanilla
1 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups oats
1 cup raisins

What you do: 

1. Preheat oven to 350 degrees F. Lightly grease a cookie sheet. In blender, blend apple sauce, turbinado, and sucanat until creamy. Add egg replacer and vanilla. Blend again.
2. In the meantime, stir the following dry ingredients together: flour, baking soda, cinnamon, and salt. Make sure you mix well.
3. Make a hole in the center and stir in the blended ingredients. Mix well. Finally add the oats and raisins, and mix well again.
4. Drop by tablespoonful onto prepared cookie sheet. Bake for 20-22 minutes, or until golden brown.
This recipe is a big favorite of mine. It is quick to do and I get lots of compliments! So enjoy!

SO HOW'D IT GO?

I LOVE THESE COOKIES! I  added a little vegan margarine to. they turned out great :)

Absolutely AMAZING!! i added nutmeg & cloves & used cornstarch as egg replacement- fabulous taste/texture/crunch! :D
