Macaroni and Cheese

What you need: 

1 package of eggless elbow or other fun macaroni shape
6 to 8 slices vegan sliced cheese, ripped into strips or squares
2 tablespoon soy margarine
3/4 to 1 cup soy milk
salt, to taste
pepper to taste
any seasonings you might like... Spike is great for this

What you do: 

Prepare macaroni according to package directions, In small mixing bowl,or saucepan, depending on whether you are going to microwave or not, combine soymilk, vegan cheese slices, and soy margarine. Microwave or melt cheese/soymilk mixture for about 2 minutes to melt the cheese and margarine. If using stove method, stir or whisk constantly until melted. Bring just to a boil. Remove from heat and either using a hand blender or other hand mixer, on low speed, mix till creamy. Add desired seasonings. This sauce is really creamy, and will set quickly. If it sets before you use it, simply reheat for about 1 minute. Pour over macaroni and stir. Serve. (Very rich)
This sauce can probably be used as a base for any cheese based sauce, like alfredo... just add appropriate seasonings.
Some tips: If you want a nacho style, use taco style seasoning and add some hot sauce and some chilis. Serve with Tortilla chips.

SOooooooo Yummy  :)>>> my little brother cant get enough and hes not even vegan  :P very rich. I blended a BUNCH of basil and two dashed of cayenne pepper. Love it!  ;)b

The sauce tasted really good until I went to blend it. After blending the sauce broke (separated liquids and solids) and it wasn't very good.

this is absolutely delicious...i used the vegan gourmet (by follow your heart) cheddar "cheese" and it came out delicious. it looked a little runny to begin with but thickened up and tasted just like the real thing. i used some garlic powder, lots of salt and pepper. i may add some onion powder or paprika just to give it a little more depth but it is already delicious. also, it reheats really well (maybe even tastes better the 2nd time around)

    This is definitely the quickest, easiest, and most delicious mac and cheese recipe you'll find on vegweb. I ended up using just under a cup of plain soy milk, earth balance, an entire package (block) of Follow Your Heart Vegan Gourmet cheddar (shredded), and salt/pepper/Spike all purpose seasoning. Be generous with the seasonings.
    I was a little worried when I tasted the cheese by itself - it's a little weird. And the sauce looked like there wasn't enough and it was too liquidy, but it came out PERFECT! The sauce really firms up and thickens when it cools for a little bit. It was soo delicious, I can't wait to make it again! If you love and miss the traditional mac and cheese taste/texture, try this recipe out with the Follow Your Heart cheese. You won't be disappointed.

definetly best mac and cheese ive ever had. including before i was vegan.. i used mozzerella shredded soy cheese and pepper jack and added corn, carrots, garlic, and green onions.
it turned out great. thankyou :)

Thanks rof for leading me to this recipe!

This was great I used cheddar vegan slices by galaxy nutritional foods. I also added Mrs. Dash. I used 2 slices and 1/4 cup of unsweetened soymilk. It was very cheesy (I would probably do 1 slice to 1/8 cup soy milk next time.)

It was great just like real mac & cheese.

I have made this recipe over and over. I LOVE IT! I made it for a party and my carnivorous friends couldn't get enough of it! I use Veganrella Cheddar Cheese. No spices and lots of salt! Soy garden butter and silk soy milk. Yum!

i am in love! i have only tried mac&chReese since i became vegan over 3 years ago and i am surprised at how much better this tastes! it surprised me that something with such basic (read: no nutritional yeast) ingredients came out so well!! i  even experimented and added carrots, cauliflower, broccoli and fake ground meat like my mom used to give me. yum!  ;D

I haven't really found a good macaroni and cheese recipe. They are never chessy enough. I also have not found a good vegan cheese. Any suggestions?

This recipe was wonderful. I cooked it for my non-vegan family and they said they couldn't tell the difference! Also, very easy to make. The only suggestion I have is that if your cheese isnt very sharp-tasting, (most vegan cheese that i've had isn't), add plenty of salt  :D
