Macaroni and Tomatoes
1 lb. box macaroni
1 14.5 oz can diced stewed tomatoes (include juice)
ketchup to taste (about 1/4 C)
1 tablespoon vegan margarine
salt and pepper
Source of recipe: My mom used to make it, though everyone I know who was poor growing up ate it.
Cook macaroni according to package directions, I think it's better a little over cooked for this recipe. Drain and return to the pot. Add remaining ingredients and return to medium heat until sauce is heated through.
It isn't the healthiest meal but it's good and if you find yourself in a tight spot for money it'll keep you fed. It also goes together in almost no time. It's great to make a big pot and keep it for lunches over the week.
