Mach-chou....Cajun Stewed Corn

What you need: 

2 cups fresh or frozen corn kernels
1/4 cup chopped bell pepper
1/4 cup chopped white onion
5 ripe cooking tomatoes or 2 large cans Muir
fire roasted tomatoes with basil
sea salt
white pepper
2 fresh basil leaves

What you do: 

Mix all ingredients in a small stock pot. Bring to a boil, cover, and simmer until corn is tender, about 15 minutes.
Serve over natural, steamed, brown rice

SO HOW'D IT GO?

Yum.  I like maque chou with a little celery and a hot pepper in the mix, but I've never seen basil in it (I usually use thyme).  Basil looks like a delicious addition.
