Mal's Oatty Sandwich Bread (for the Bread Machine)
1 1/3 cup water
2 1/2 tablespoons vegan margarine
1/3 cup organic sugar
1 teaspoon salt
2/3 cup oat bran
2/3 cup quick rolled oats
3 cups bread flour
2 tablespoons vital wheat gluten
3 1/2 teaspoons active dry yeast
Add ingredients to bread machine pan according to machine instructions.
Set on Whole Wheat cycle.
After the bread is finished cooking, allow it to cool before slicing. Store in a resealable bag on the counter; storing it in the fridge will cause it to dry out. The bread can also be frozen for later use.
Note: Make sure that the yeast is at room temperature before starting the bread machine. Cold yeast is shocked until it comes to room temperature, so trying to activate it before it has warms up will result in yeast with very little leavening power. Also, if using the delay function, make sure to make a well in the flour and gluten before adding the yeast. Do not spill the yeast outside of the well. This will help ensure that the yeast doesn't touch the water before it needs to.
