Mama Koala's Vegan Mac and "Cheese"

What you need: 

1 (16 ounce) bag elbow macaroni
1/4 cup vegan margarine or vegan butter (I prefer Earth Balance Soy Butter)
1/4 cup flour
2 cups nondairy milk (I use soy)
1 (8 ounce) package vegan cream cheese (I prefer Tofutti Cream Cheese)
1 (10 ounce) block vegan cheddar cheese (I use Follow Your Heart's Vegan Gourmet), shredded
nutritional yeast, to taste (I use 1-2 cups)
salt and pepper, to taste
bread crumbs, as needed

What you do: 

1. Preheat oven to 350 degrees F if baking mac and cheese. In a large sauce pan, boil elbow macaroni according to package directions.
2. While the macaroni is boiling, in another sauce pan melt margarine and stir in flour. Next, add the milk and stir until thick and smooth. Add the cream cheese and stir until completely melted over medium-high heat.
3. Add shredded cheese and stir until completely melted. Add nutritional yeast, salt, and pepper to taste. If you don't want baked mac and "cheese", just pour the cooked and drained elbow macaroni into a large casserole dish and stir in the "cheese".
4. If you prefer baked mac and "cheese", in a casserole dish mix the cooked and drained noodles and "cheese" sauce, and completely cover the top with bread crumbs. Bake for 20-30 minutes.
Source of recipe: This recipe was inspired by a vegan recipe featured in a regular column titled Naked Maygun's Vegan Recipe Section from the magazine Profane Existence. My boyfriend and I were surprised at how authentic and delicious it turned out, we make this on a regular basis now!

SO HOW'D IT GO?

This macaroni and cheese is so good! I would recommend it even to non-vegans. It's so creamy, especially with the tofutti cream cheese! I've never had nutritional yeast before, next time I will use 1/2 cup instead of a cup, the taste is great, but the smell is a bit strange. This is the best macaroni and cheese I've ever had, vegan or not. It's just as good reheated too, I mix a little soymilk in and it's great! Thanks for the recipe!

This was good.  At first I only used 1/2 cup of nutritional yeast and it was tasty.  I added another 1/2 cup to experiment, but I liked it better with just 1/2 cup.  I added black beans, vegan beef crumbles, diced tomatoes, onions, spices, and corn chips for a taco mac with the leftovers ;)b

I can't believe how good this was. Iffy about the nutritional yeast because I have always thought that it tastes weird ... But 1/4 cup did the job! So yummy added 1/4 c of onions 2 minced garlic cloves and green chile peppers so amazing with a little tapatio superb

I'm a little late but I made this for thanksgiving. It was sooo good...I ate it everyday for a week after until it was gone and never got bored of it. I actually want some right now lol. I did add monterey jack and cheddar instead if just cheddar and added some fakin (fake bacon).

BEST CHEESE SAUCE EVER!!!!!  My hub and I love this mac and cheese, and we add broccoli and white (cannellini) beans to add some more nutrition.  I used olive oil instead of vegan butter and it turned out as great as always.  Thank you! ;)b

The best vegan mac n cheez EVERRRRR!! I used a box of elbows, half the amount of cream cheese(Tofutti?), half the amount of "Follow your Heart" cheese, Earth balance soy butter and rice flour...Some Jane's Crazy Mixed up salt and voila! Awesome:))
