Mamaw's Homemade Buttermilk Biscuits

What you need: 

2 cups self-rising flour
1/4 to 1/3 cup vegetable shortening
1 cup soy milk
1 tablespoon distilled white vinegar
2 to 3 tablespoons vegan margarine.

What you do: 

First, combine the soymilk & vinegar and set aside.
Next, in a small bowl throw in the flour and cut in the vegetable shortening with a fork. I like to use Crisco butter flavored shortening, which is vegan! :) Next, pour in the milk mixture and gently stir until the batter comes together.
The key to great biscuits is to not handle them too much. The more you stir them or knead them, the tougher they become. This rule follows for the next part as well.
On a clean surface, generously spread all -purpose flour to cover the surface you will be working on. Place the batter on the floured surface, and throw a little more flour on top. With a rolling pin, roll out the dough, but not too thin, because these biscuits don't rise a whole lot. Next, you can use an empty round can or glass to cut out the shape of the biscuit. I usually end up cutting out biscuits and re-kneading the leftovers a couple times to end up with about 6-8 biscuits.
Place the biscuits on a greased baking pan or iron skillet, put a small pad of vegan margarine on top of each one, and put them in the oven.
Bake these biscuits at 400 degrees for about 15-20 minutes or until slightly browned on top.

SO HOW'D IT GO?

These biscuits are extremely good!!!  The thicker you roll them the better.  I used the 3 TB baking soda and 1 tsp salt as recommended by someone on here and they turned out great.  I made these today just after picking local strawberries, so we're having strawberry shortcake for dessert tonight!  Yummy!!!

These buscuits were SO GOOD. 

I halved the recipe; using all of the recommended ingredients except for the Shortening.

Instead, I used a combo of Margarine & Applesauce (3/4 marg., 1/4 Applesauce; equally 1/4c.).

I also made drop buscuits instead of rolling them out, and came out with 6 biscuits, even though I halved the recipe!

Hands down, the best homemade biscuits I've had, let alone made!  Good job, and thanks for sharing  :)

I don't really review recipes, but I had to review this one. This is absolutely the best buttermilk biscuit recipe out there. I have tried 11 different recipes, and tweaked them countless times in an effort to find the perfect recipe. Well, I found it, and here it is. As an added bonus, this recipe is crazy easy. Just a few ingredients that are always stocked in any vegan's pantry. This doesn't a require ridiculous number of ingredients, like most biscuit recipes out there (vegan or not).
I did make a few changes:
Halved the recipe and added 1/2 teaspoon of baking powder, and baking soda. This made the biscuits even fluffier.
Baked it at 400F for 10 minutes, then brushed the tops with margarine, and then broiled it till golden brown. This is probably just because of my dumbass oven. I think most people should get a good golden brown surface.
Give this recipe a try, and you will never look for another biscuit recipe again.

Mmmm!  We doubled the recipe and started to use half whole wheat and half all-purpose but ran out of all purpose so i think it ended up being 1 cup all-purpose and 3 cups whole wheat.  My 11 yo daughter made them, they were so good!!! ;)b

These are FANTASTIC! My mom's buttermilk biscuits were my favorite growing up, and these taste just as good. I used 1 cup whole wheat and 1 cup white flour. I added the margarine into the dough (I've never been good at reading the directions all the way through hehe), then used about 1 Tb for the tops. I also made my own self-rising flour using 3 Tb baking powder and 1 tsp salt as per google searching.

Definitely try this one! You won't be disappointed. ;)b

These are now my favorite biscuits!  They are so light and tender!  I make my own self rising flour, using 1 Tablespoon baking powder and 1 teaspoon salt and enough organic white flour to make 2 cups.  And I always use 1/3 cup of shortening.  I don't bother rolling them out, I make drop biscuits and they are delicious!

I haven't tried this yet, but I probably will soon.  I just wanted to say that I love that you call your grandmother "Mamaw," too!
