Mango Salsa

What you need: 

1 mango - peeled, seeded and chopped
1/4 cup finely chopped red bell pepper
1 green onion, chopped
2 tablespoons chopped cilantro
1 fresh jalapeno chile pepper, finely chopped
2 tablespoons lime juice
1 tablespoon lemon juice
salt to taste

What you do: 

Mix everything together in a bowl and allow to sit for at least 30 minutes before serving to allow the flavors to mingle.
Be sure to use nice and ripe mangoes that are soft to the touch, preferably the varieties you get from Indian or Korean grocery stores.
This salsa is great for dipping tortilla or pita chips. Use it to top off spicy tacos. One of my favorite ways to serve it is with sliced tofu baked or pan-fried and seasoned with Cajun or Jamaican Jerk seasoning. The contrast of spicy and sweet is amazing. You're sure to be hooked!
