Margie Conners Waffles

What you need: 

4 1/2 cups of water
3 cups of rolled oats (I use old fashioned)
1 cup soaked and frozen garbanzo beans*
1/2 cup pecan meal
2 tablespoons oil
2 tablespoons date sugar
2 tablespoons vanilla (I use imitation, if using pure, you might want to cut back)
1 tablespoon maple flavor (I use natural flavor, if using extract, you might want to cut back)
1 teaspoon salt

What you do: 

To freeze garbanzo beans:Cover dry garbanzo beans with water and soak overnight. Drain and rinse well. Soy beans also work in this recipe, but I like garbanzos best. Measure out one cup beans in separate bags, and put in the freezer for later use. Frozen Garbanzos also make very good patties.
Put all ingredients in blender. I use a Vita-Mix, but if you do not have one, you may want to blend in batches. Blend until creamy.
Pour into prepared, hot waffle maker. Serve with pure vegan maple syrup or thickened fruit - were partial to blueberries.
