4 ripe bananas
1 can cream of coconut, sweetened
Whip 'em all together in a mixing bowl! It has the same texture and similar flavor to marshmallow sauce.
I layered it in a graham cracker pie crust with Tofutti vanilla ice cream and sprinkled coconut flake on top, then froze it, and it was really good. Once frozen it's like a soft ice cream.
It also tastes good as a sauce over desserts.
Source of recipe: My boyfriend accidentally brought home cream of coconut instead of coconut milk, and I wanted to use it in something.
