Mashed Turnips

What you need: 

2 large turnips (about 2 pounds), washed, peeled, and cut to 1" cubes
6 1/2 cups apple juice, divided
2 teaspoons salt
1/4 teaspoon ginger
1/4 teaspoon cinnamon
2 tablespoons margarine
salt and pepper, to taste

What you do: 

1. Preheat oven to 350 degrees F. Place turnips in the apple juice, reserving 1/2 cup for later use. Add salt to boiling juice, lower heat and simmer until very tender.
2. Drain off liquid and all remaining ingredients to the turnips and beat with electric mixer on high until smooth.
3. Place in oven safe dish, and bake for about 1/2 hour or until moisture has cooked off.
If using for a holiday or party, can be made a few days in advance to enhance the flavor of the ginger and the cinnamon to the turnips.

I made this today for Christmas dinner and my family loved it. Only thing I did different was not use a mixer as I didn't have one (that worked) I blended by hand and it turned out wonderful. Thank you for this recipe it is a keeper. ;)b

This is a lot more delicious than my picture leads to believe. They are soooo good. I made them without the margerine and used water to boil them instead of applesauce, but they were still great. Everyone who had them at our Christmas dinner loved them.
