Melt-In-Your-Mouth Banana Pancakes

What you need: 

2 cups flour
7 tablespoons (about 1/2 cup) sugar
1 teaspoon baking powder
2 bananas, mashed
2 cups nondairy milk (I use unsweetened almond milk)
2 teaspoons vanilla
1 cup dark chocolate chips, optional (I like Ghirardelli)
vegan butter, to serve

What you do: 

1. Mix the flour, sugar, and baking powder together in a large bowl.
2. In a separate bowl, mix the mashed banana, nondairy milk, and vanilla, then pour the wet mixture into the first bowl.
3. Mix well and add the chocolate chips, if using. Pour the batter onto a greased pan and flip when the sides are bubbling and the bottom is a nice tan color.
4. Spread vegan butter on top and indulge!
These pancakes are super easy to make and have been praised by several of my nonvegan friends! They have a rich banana taste and are very moist. I hope you like them!

SO HOW'D IT GO?

I really wanted to like these, but they just didn't turn out for me. I've been making pancakes for years, so I know all the tricks for a light and fluffy pancake. I followed the directions to a tee, but they turned out very heavy and gummy. I had to toss the whole batch. :(  I doubt I will try them again since I don't like to waste ingredients.

okay, these are my new regular. sososo goood. with our without chocolate chips and peanut butter on top. fabulous! i only used about 1 tablespoon of sugar though, and i thought they were perfect. i eat these all times of the day, no lie, haha thanks you for the recipe  ;)b

These pancakes are soooo good. I didn't use the chocolate chips, but I spread natural crunchy peanut butter on the top instead of butter, garnished with a couple more slices of banana and drizzled with maple syrup. This is my new favorite food to eat!

These are sooo moist and fluffy!  Delicious, I've made these a few times now.  Adding walnuts makes them even better.

These were awesome and super low hassle to make. I didn't use the chocolate chips and subbed the sugar for 4 tbs of agave. They were just sweet enough and I topped them with some cooked apples and cinnamon. This will be my go to recipe for pancakes from now on!

Made these yesterday morning. Absolutely delicious! And very easy and quick to make, at that. I was able to make them with ingredients already in my kitchen.
