Messy Jane's

What you need:

1 to 2 slices bread (I use one slice of Ezekiel Cinnamon Raisin)
1 to 2 tablespoons nut butter (I use super grainy, unsweetened almond butter)
1 to 3 tablespoons unsweetened vegan yogurt (I use Wildwood)
1 to 2 tablespoons fruit preserves, or as desired (I use strawberry preserves)

What you do:

1) Toast the bread and coat with nut butter. Dollop on the unsweetened yogurt and spread it around the slice. Top it off with a yummy amount of preserves and if you want, another slice of bread.
**This recipe is very adaptable to whatever you have on hand. Personally, I think that the UNsweetened soyogurt is imperative because it gives "Messy Jane" the tartness she exudes =] I normally have just one slice and a cup of freshly squeezed juice for breakfast**
Source of recipe: I've made these for years!! I named them "Messy Jane's" as a play on words from "Sloppy Joe's." I think it's pretty clever, but my family still laughs at my quirkiness =]Enjoy carefully && often =]

Just a sidenote, This also tastes great with sweet, in-season, fresh fruits rather than the preserves (it also adds a healthier touch for diabetics or anyone looking for a little less sugar in their diet)!! :)>>>
