Mexican Polenta Casserole

What you need: 

polenta (I use the sun dried tomato flavor)
tomato sauce
garlic powder (to taste)
salt (to taste)
pepper (to taste)
canned chopped (or fresh) tomatoes
soy chorizo
vegan mozzarella (I use Follow Your Heart)

What you do: 

Put the polenta in a baking dish and mash it. I use a potato masher, but a fork works. In a separate bowl mix the sauce, tomatoes, and spices. I throw the soy chorizo on the foreman grill until it gets browned and crispy...you could also use a skillet. Poor the sauce mixture over the polenta, place the soy chorizo on top and put slices of the "cheese" on the sausage...stick it in the oven at 350 for maybe 20 minutes and enjoy! Hope you love this as much as I do...it hits that Mexican comfort food spot :)

SO HOW'D IT GO?

This was good, everyone in my family liked it. I added a can of corn. I think in the future I would omit the sausage abd add black beans, corn, and black olives to make it more mexican Smile
