Mexican Rice

What you need: 

1 cup white rice
1/4 cup onion, minced
1 garlic clove, minced
corn oil, as needed
1 (6 ounce) can tomato sauce
1/4 cup peas
1/4 cup carrots, cubed
1/4 cup corn
2 cups hot water
cilantro, to taste
salt, to taste

What you do: 

1. In a pan at high temperature, fry the rice with onion and the garlic until gold. Drain the oil and continue cooking at medium temperature.
2. Add the tomato sauce and the vegetables. Give a turn and add the hot water and cilantro; bring temperature to low, add the salt.
3. Cover and let it stand for approximately 20 minutes, until tender.

I did make one change to this recipe. Instead of a can of tomato sauce, I used a can of fire roasted diced tomatos. Super tasty rice  :)

i used one red bell pepper instead of peas and it turned out wonderful!
this is my favourite way to eat rice actually.  ::)
