Mexican Style Scrambled Tofu
1 pound extra firm tofu
1/2 onion, chopped
1/4 green pepper, chopped
4 tablespoons freshly chopped cilantro
1 medium tomato, chopped
1 tablespoon cumin
Salt to taste
1) Add the onions and green peppers to an oiled pan over medium heat. Add salt and cumin and cover for 2 minutes or until the onions are soft. Crumble the tofu onto the pan and add the tomatoes and cilantro. Cook covered for 5 to 7 minutes or until the tomatoes are soft and juicy.
This recipe can also be used to make delicious breakfast burritos. Serve with homemade refried beans, fresh avocado slices and enjoy!
