Mias Delicious Veggie Tofu Burrito
olive oil, as needed
1/2 pound firm tofu, crumbled
1/2 large green bell pepper, chopped
1 medium onion, chopped
5 cloves garlic, minced
1 large squash, chopped
salt and pepper, to taste
garlic powder, to taste
1 (16 ounce) jar salsa
1. Heat a large skillet with olive oil on medium/high heat. When heated enough, add the tofu and scramble in the pan.
2. After letting the tofu cook a couple minutes, add the veggies and saute 5 minutes or until the onions turn a slight golden brown. Add seasonings.
3. When finished, heat up the tortillas. Add the veggie/tofu mixture to each tortilla, and spoon a generous amount of salsa on top.
Voila! This is one of the easiest vegan dishes I make and it tastes great! Even my carnivorous friends love it, but swear they hate tofu.
