Microwave Brownie for One

What you need: 

1/4 cup flour (I use white whole wheat)
1/4 cup sugar (brown is yummy)
pinch finely ground salt, optional
1/8 teaspoon baking powder
1-2 tablespoons cocoa, to taste
2 tablespoons liquid (water or nondairy milk)
1 tablespoon vegan margarine, melted
1 tablespoon toasted nuts, chopped, optional
1 tablespoon vegan chocolate chips/chunks, optional

What you do: 

1. Combine the dry ingredients in a cereal bowl with a spoon, making sure to break up any brown sugar lumps (if using brown sugar) and cocoa chunks.
2. Stir in the liquid ingredients, leaving a few chunks in the batter, but scraping the sides and bottom of the bowl so it is mostly smooth. Stir in any nuts/chocolate bits that you might like in your brownies.
3. Scrape the sides of the bowl with the back of your spoon and flatten out the top of your brownie. Pop it in the microwave, and set it for two to three minutes. Do not walk away!
Not only is watching the brownie cook nifty and fun, you know it's done when it looks dry in the middle and a toothpick stuck in the center comes out clean. If you walk away, you risk burning your chocolate-y delight! When it's done, let it cool for a minute, and dive in with a spoon!
I have a pretty powerful microwave, so I used "Power Level 7" to ensure even cooking. You might want to do the same for a strong microwave, or if you have a weak dorm room variety, just nuke it on high.

Yum, Yum, YUM! I made these tonight & they were delicious!!! So much better then the store kind because I could control the amount of sugar I put in it. I added a tad bit too much soy milk, but it still tasted great!! I used small ramekins that I have been wanting to use for something (but I couldn't find a use for them), & it was like a little brownie-souffle thing. This is going to be really useful when I need a quick desert. Thanks!

I've made this recipe at least 50 times now. I seriously have it memorized.
Friends ask if I have any sweets, I whip up a batch of this stuff for them. In college, the gift of a microwave brownie is the highest of compliments.
This recipe suits me well, because if I kept sweets in the apt., I'd eat them all in one night. With this recipe, I eat the whole batch, and that's it!  :-D

Ahhh, just what I was wanting. I've tried other recipes like this before, but a lot of them ended up being too spongy and weird. This was great though (even though I cooked it a little too long). Thanks for sharing!

So delicious! Like many others I was craving something fast and chocolatey and this was amazing. I lacked vegan margarine so I used about 1/2 tbsp of coconut oil instead and used black coffee for the liquid. Also added in a dash of cinnamon and a bit of coconut. I will be making these over and over. Thank you!

I finally made this this morning, just b/c i actually had time. i had a bite, and the other 4 ate it up nicely,  and quickly gave the recipe to my omni friend. I am not a sweet food person, but will probably make often when company is around, b/c most of them are sweet foodies. thanks for the recipe :)

Perfect for an impromptu chocolate craving. I used raw sugar (it remained crunchy so maybe not ideal in this recipe) and vanilla almond milk. I had to use 4 TBS of liquid instead of just two, but this is wonderful! I topped it with chocolate syrup ;)b

I used olive oil for the marge, and oat flour. Stirred in a scant half-teaspoon of chunky peanutbutter before cooking. Ohhhh yes.

These are awesome for when i'm craving quick chocolate :) My favourite is too put vegan ganache ontop so it stay's moist and yummy.

I have a love/hate relationship with this brownie. It's so yummy, fast and versatile. But, I have a feeling it's going straight to the hips!!!!  ;D

I've made this a few times, and it's really good for something in the microwave! This time, though, I added a little oil and almond extract and it was WAYYY yummier.
