1 medium eggplant, medium dice
2 large zucchini, large dice
1 large onion, chopped
3 cloves garlic, chopped
1 28-oz. can stewed tomatoes, drained
1/4 cup quinoa or whole-wheat couscous
2 tablespoon dried Italian seasoning mix (basil, oregano, thyme)
crushed red pepper, optional
After all the veggies are prepared, place all ingredients except the seasonings and pepper in a very large casserole with a tight-fitting lid. Microwave on HIGH for 25-30 minutes, or until done to your taste. Open carefully and add the spices, stirring well. Replace the cover and let the flavors mix for 10 minutes or so.
Serve as a side dish, or a main dish over brown rice or pasta. Its delicious mixed with your favorite chili. Its very versatile.
