Mock "Chicken" Salad

What you need: 

1 (15 ounce) can garbanzo beans, drained (liquid reserved)
1/4 onion
1/4 cup walnuts
1 stalk celery, peeled
2 tablespoons vegan mayo (I use Vegenaise)
4 pita pockets or sandwich bread
lettuce leaves, to serve

What you do: 

1. Use a food processor to lightly process garbanzo beans. I like them to have some intact beans for texture.
2. Process onion, walnuts, and celery to a crumbled consistency. Place all processed ingredients into a bowl and add the vegan mayo, along with some of the left-over liquid from the garbanzo beans.
3. Mix to desired consistency, and place the "chicken" salad into the pita, or onto the bread with lettuce and enjoy.
I just eat this right out of the bowl to save calories! If you want, you can also process peeled apple for a bit of sweet flavor.

SO HOW'D IT GO?

I had a can of chick peas and wanted to make "chicken" salad, as I tried the mock tuna salad from this site and it was delicious!

I used this recipe as a guideline and omitted the walnuts, then added apples, grapes, parsley, salt and pepper.
