Mock Crab Salad
2.2 ounces vegan imitation crab (I get mine via vegcyber.com)
4 capers, minced
1/2 stick celery, chopped
1 clove garlic, crushed and chopped
4 tablespoons vegan mayonnaise
1 scallion, white part only, chopped
1/4 teaspoon dill
1/8 teaspoon oregano
1/4 teaspoon lime juice
Mixed salad greens
1 vine ripe tomato, cut into wedges
2 small snow cap mushrooms, sliced
1 radish, sliced thin
1/4 small red onion, sliced thin
1) Combine all ingredients accept salad veggies and chill in freezer for five minutes. I generally chop the veggies for the salad during this time.
2) Combine salad fixings, keeping tomatoes separate. Place tomatoes on top of salad like a bull's eye, then scoop imitation crab mix at the center of the tomatoes. Serve alone, or with crusty bread.

Delicious! ;)b I had bought the package of "crab" shreds wanting to do something with it. I was so excited to find mock seafood on that site! I had always loved seafood. Thank God for vegcyber.com! :) Thank you for sharing your recipe! I didn't have the capers, I used garlic powder instead, no scallions, no lime juice, but the dill and oregano were the perfect amount! I can't wait to try it with the "tuna" from the same site!
