Mock Tuna Salad

What you need: 

1 (15 ounce) can chickpeas, drained and rinsed
2 tablespoons vegan mayonnaise or pureed silken tofu
1 tablespoon sweet pickle relish
2 teaspoons spicy brown mustard
salt and pepper, to taste

What you do: 

1. In small bowl, mash chickpeas.
2. Add mayonnaise or silken tofu, pickle relish, mustard, salt and pepper, and mix well.
This is wonderful in a whole-wheat pita with sprouts and some chopped tomato!

SO HOW'D IT GO?

I just made this for lunch and it was delicious!  I added chopped celery to give it some crunch and lemon juice to brighten the flavor.  It was so easy and is a nice variation on my usual hummus sandwich.  Thanks for the recipe!

Holy COW... I just made this thinking that I was going to save it for tomorrow (and not taste it... hah!,) but it just smelled so good, that didn't work out too well.  This stuff is absolutely fantastic.  One of the things I've really been missing is tuna salad, and honestly I like this even better.  Mmm, mmm, mmm.

honestly this deserves all the praise it gets! i seem to get a lot of tuna mayonaise cravings so i thought i'd try this and it amazing- really satisfied my craving. I added in flakes of nori and a dash of soy sauce and it has a real authentic salty sea taste. Really filling and cheap too so mega bonus. My boyfriend works in a vegan restaurant and wants to put this on the menu in some from! :)>>>

this was awesome. I really wasn't expecting much out of it- especially since I used to love tuna salad in my pre-veggie days- but it's excellent and filling, with a great taste. I added celery, lemon juice, and onion but otherwise pretty much stuck to the recipe. really, really good in a pita with some lettuce and tomato- yum :)>>>

I have been pregnant and craving a tuna salad sandwich... this totally hit the spot I added some crumbled up seaweed, green onions, parsley, old bay seasoning, garlic powder, seasoned salt, and a splash of lemon juice. The lemon juice and seaweed really gave it a good "tuna" taste.

I made this for a picnic over the weekend.  So easy and quick to prepare!  I added a splash of tamari and some onions.  We used the leftovers on some toast, pretty tasty!

OMG, this was sooooo gooooood!!  I can't believe it took me this long to try it.  One of the things I missed most when I gave up my pescatarian ways was tuna salad sandwiches.  I always had 8-10 cans of tuna in my cupboard at any given time.  Well, I don't have to miss it any more.  This stuff is awesome!  I added two minced green onions to the mix and yummed it down on three seed bread with tomato, avacado, sliced mushrooms and sprouts!  Nom, nom, nom........

im not a cook.  at all! but this was easy to make and tasted great!  have to admit though, i doubled the recipie ( oh yeah this boy has an appetite ) and i put what my mother puts in her tuna fish....celery, apple, walnut, and onion.  oh and paprika and a wee little bit of cayanne pepper.  just for spice. it was awesome!
