Moist and Delicious Banana Bread

What you need: 

1 1/2 cups unbleached flour
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
2 very ripe bananas
1 tablespoon cooking oil
1/2 teaspoon vanilla extract
1/2 cup sugar
1/4 cup brown sugar
2 tablespoon water
1 tablespoon cooking oil
2 teaspoon baking powder

What you do: 

Preheat oven to 325 degrees. In a large bowl, mix flour, baking powder, baking soda, cinnamon, and a pinch of salt. In a small bowl, mash bananas, and add 1 tablespoon oil, vegan sugar, vegan brown sugar, and vanilla. In a separate small bowl (I use a short drinking glass) mix 2 tablespoon water, 1 tablespoon oil, and 2 teaspoon baking powder. This is to substitute using an egg. It gets fizzy, but don't panic, it turns out great. Add this mixture to the first small bowl and mix well. Add the wet mixture to the dry mixture and stir until well blended. Pour the batter into a greased loaf pan. I like to sprinkle some extra cinnamon on the top to make a nice crispy cinnamon crust. Bake at 325 degrees for 50-55 minutes, or until the top is golden brown and a wooden toothpick stuck in the center comes out clean. Let the bread cool for about 10 minutes, and slice it up!

Followed the recipe as posted.  It was OK good but I'll keep looking.  Flavor was not great (traditional banana bread recipes do not use cinnamon), and it was not that moist (could probably use more oil or some applesauce).

This is awesome, my non-vegan boyfriend loves it & now purposely lets  bananas to go brown so I will make it. Did make a few small changes...I make sure not to mash the bananas up too much. it seems to make it a bit more moister. Also, I usually use twice as many bananas as the recipe calls for. Thanks.  :)

Yummy  ;)b I havent had banana bread in over a year, and didnt have any soymilk and this was the first recipe i found with just stuff i had lying around.

I totally forgot to review this recipe. I made it months ago, and it is possibly the best banana bread EVER! I used a ton of mini bananas rather than two large ones (about 10, maybe?) and I added ALOT of chocolate chips. Maybe too many (is there such a thing?). Anyhoo, it didn't last long, because it got eaten pretty fast. It stayed nice and moist for the few days before it was finished. Will definately be using this recipe again.

this turned out awsome... i also tried it with some chocolate chips...YUMMO...my daughter is very allergic to eggs so its hard to find recipies i can use... im glad i found this site... about the water oil and baking soda mix...is that substituting 1 egg?? cause i would like to use it in other recipies...thanxs
