Mom's Apple Brown Betty

What you need: 

4 or 5 red delicious apples (peeled and cut into medium sized chunks)
1 tablespoon cinnamon
1 teaspoon nutmeg
1 teaspoon arrowroot powder
4 tablespoons soy margarine (melted)
2 cups oats (quick or regular)
1 cup pecans (coarsely chopped)
1/2 to 3/4 cup of organic cane sugar or Turbinado sugar (depending on how sweet you want
it; use less if you're trying to watch your sugar intake)

What you do: 

Combine oats, pecans, sugar, cinnamon, nutmeg, and the melted soy margarine in a bowl.
Preheat oven to 350 degrees.
In a separate bowl, peel apples and cut them into medium-sized chunks and then add the arrowroot powder (mixed with about 1 teaspoon water).
Pour apples into a 2 quart or 2 1/2 quart baking dish. Pour the oat mixture on top (spread evenly), and bake for 1 hour.
You have the option to bake it covered for the entire hour OR you can bake it for 20 minutes uncovered and then cover for the final 40 minutes.
Let cool for a little while then dig in! Delicious!

SO HOW'D IT GO?

I've made this two times and it has been a hit.  I've made a couple sinful modifications though (as through my mother's recommendations):

- 6 tablespoons of un-melted soy margarine.  Simply cut it into the mixture.  Melted margarine can slightly cook the quick oats.

- Brown sugar all the way!  Yummy and authentic.

- Disperse 1/2 of the oat/sugar mixture within the apples.  Sweet all the way through is nice :)

- Doesn't hurt to cook the Brown Betty uncovered for the full hour.

Wonderful! Super tasty, and the only "change" I would make for next time would be to leave it uncovered for at least 30 minutes while it's baking. I like the topping to be a bit crispy, and it's not crispy enough for me right now, so I'll definitely leave it uncovered longer. Thanks!!

Very simple, very delicious desset.  I topped mine with cashew cream (from the American Vegetarian Cookbook from the Fit for Life Kitchen by Marilyn Diamond) and it was great.  Would probably be good in the summertime with peaches or berries instead of apples.  Thanks for the recipe.

My mom gave this recipe to me over the holidays and I've already made it twice. It's a nice sweet treat!
