Mom's Eatmore Bar
1/2 cup peanut butter
3/4 cup corn syrup
1 cup vegan chocolate chips or chopped vegan chocolate
1 1/2 cups rolled oats
1 cup peanuts, chopped
1. Boil corn syrup and peanut butter for 1 minute. Add chocolate and stir until melted.
2. Add oats and peanuts and mix well. Spread in a 9 x 13: pan.
3. Cool for at least 1 hour. Cut into bars. I usually cut them into 12, but you may desire a smaller or larger bar.
Source of recipe: This is a recipe of my mom's that I modified slightly. She uses honey in hers, but corn syrup works just fine.
