The Most Fabulous Frozen Chocolate PB Cookies on Planet Earth!

What you need: 

1/4 cup light soy milk (try to use plain b/c cookies could be too sweet if you use sweetened milk)
2 tablespoons cocoa powder (unsweetened)
2 tablespoons sugar or vegan artificial sweetener equivalent
1/4 cup natural peanut butter (sweetened is OK, if unsweetened, increase the amt of sugar accordingly)
1 cup uncooked oats
2 teaspoon olive oil

What you do: 

Add soy milk, cocoa powder and vegan sugar (or substitute) in a small NONSTICK saucepan over low heat, and stir often until sugar dissolves and all ingredients mix nicely.
DO NOT BOIL (soymilk will curdle and that is ICKY my friends!), but make sure it gets very hot. Remove from heat. Add peanut butter and stir into mix until melted.
Stir in oatmeal and oil.
Drop with a greased tablespoon into 16 balls onto a baking sheet lined with wax paper, or sprayed with nonstick spray. Freeze (covered if desired) for a minimum of 4 hours. They are better the next day after you make them.
Yes, you eat these frozen!!!!
About 70 or 80 calories per cookie and about a gram of fiber. You could play with the sweetener to desired sweetness, but I really like it this way. Enjoy!

**Update** Once I had a couple, I just couldn't stop eating them.  I don't know if I have the willpower to be able to make these ever again.  Sorry.  Great recipe, but I don't think I can do it.  :D


These are awesome!!! I made them with maple syrup and water instead of the sugar and soy milk (in between grocery trips), and they came out fine.  Delicious, just the right amount of chcolate and PB.  I looooove cold desserts!  The hardest part was waiting. Oh, and not eating them all at once. 


Love the chocolatey goodness of this recipe! I did modify the ingredients a bit to make it sugar free and soy free...also wanted a bit of a buttery taste so I exchanged the oil for margarin. I used 1/4C water, 2T vegetable glycerine (very sweet low glygemic alternative, only candida approved sweetener) and I added 3 T of shredded coconut. I am not sure if I used exactly 1/4C of PB because I just put a heaping TBS in there (unsweetened) I know this is quite a bit different from the original but it is very good!  ::)


Fabulous recipe!  :D This is perfect considering the fact that most people have all of these ingredients at hand. I changed it up a bit. I had some chocolate hemp milk that needed to be used so this was great for it. I also used coconut oil (another GOOD fat), instead of olive oil. I highly recommend it!! I even took it a step further and dropped spoonfuls of the mixture into a container with shredded coconut and shook it around to coat it. Not only does this coat it quite nicely, it rolled it into a ball - hardly any mess. :) I'm a huge fan of coconut, chocolate, and peanut butter so this recipe is a KEEPER!  :D


I was very nervous to try this because I always remember the chocolate oatmeal cookies my mom made with margarine and milk and regular sugar in them. I tried these and that are truly fabulous. I used Smuckers natural peanut butter with honey instead of the plain but kept everything else the same. I doubled the recipe and made about 14 good sized cookies. They are good right away, but they are fabulous frozen the next day. And what's more, my kids loved them. This is definitely something I will make a family recipe. Finally a cookie that is all natural and delicious. I would much rather see my kids eat these than any other cookie. Thanks for sharing the recipe.


these were so easy and yummy! i doubled the recipe, threw in some oat bran because i had it in the pantry, used crunchy natural peanut butter, and hardly used any oil, (i probably could have skipped it completely, they were pretty moist). they were LOVELY.  my non-veg roommates and i basically devoured them! (i myself probably ate half or heh).  ithey were a little too hard frozen, so i just chilled them.  they were a bit more fudge like and chewy and cold and kind of refreshing. delicious!!


these are yummy!! I used agave syrup, and not much, but I like bitter things. 


I made these again but followed the recipe exactly and used the full amount of sugar.  I like them better without all the sugar - I just use 1 Tbs.  They are fabulous!!!  :)


It was a funny joke austux, nevertheless.


I am addicted to these.  Seriously, it's a problem.
