My Favorite Black Beans Recipe

What you need: 

5 tablespoons olive oil
1-2 medium onions, diced
3-5 garlic cloves, diced
1/8 tablespoon cayenne
1/4 tablespoon black pepper
2 tablespoons cumin
2 tablespoons basil
1/2 tablespoon oregano
1 tablespoon ground coriander
1 (15 ounce) can black beans (I like organic)
1 tomato, diced

What you do: 

Takes 10 minutes max to cook, so if you want rice, polenta, or cornbread; start cooking it before.
1. Add everything except black beans and tomatoes to pan, and saute until soft (approximately 5 minutes).
2. Add in beans and tomato, and heat it until bubbly.
Hope you all will enjoy this as much as my family does.

SO HOW'D IT GO?

This was so good! I added bell peppers and served it over rice seasoned with cilantro and cumin.

Very tasty! Going to be eating this for the next couple of days. I didn't drain the beans, made it saucy. Pretty spicy but I'm fine with that.

I followed the recipe exactly the first time and I found I had REALLY overspiced it! The next time I halved the spice measurements (adding more to taste as it cooked) and used canned tomatoes with 1 fresh one chopped as well (it was much more flavourful and saucy) so, to each his own! This is definitely a go-to recipe if I don't feel like going out in the cold to do grocery shopping  ;)b

wow this is so delicious!! the combination of spices is right on. I pretty much followed the recipe exactly (except guessed on the spices). i think this will become a weekly meal. thanks!

To make this more kid-friendly, I did teaspoon measures instead of tablespoons, doubled the beans (drained and rinsed), and added a can of diced tomatoes instead of a fresh tomato. I also stuck to one onion, and added a bit of water since I drained the beans. I probably could have added a bit more of the spices, but it was very flavorful and my son ate every bite of it.

did you drain & rinse the black beans or just put the whole can in?

This was very good!  I was surprised.  I had this, with cornbread on the side.  A delicious lunch today.  Thank you for the recipe.  The only change I made is I used a can of tomatos rather than a fresh one.  The canned ones have much more flavor this time of year.
