My Happy Sandwich

What you need: 

1/2 avocado, mashed
two cloves garlic, minced
1/2 small onion, chopped
1/2 small tomato, chopped
1-2 mushrooms, sliced
lemon juice to taste
sea salt and fresh ground pepper to taste
2-3 tablespoons sunflower seeds
1/2 cup rice
alfalfa sprouts
pita bread

What you do: 

Combine all ingredient except sprouts and pita. You can add more or less or completely omit whatever you choose. After everything is mixed cut pita in half. Put one half inside the other. Add the mixture and some sprouts, and you are ready to feast.

you could sub the rice with more sprouts maybe? I guess you could also use soaked oats, if you wanted to sub them with another carb of sorts. I know oatmeal works just fine soaked overnight in a little water... i'd try the sandwich that way, but then again, I'll eat oats in any format. :P
Are you wrapping the sandwich in lettuce, or do you have raw tortillas or something?


This sounds amazing, but I was wondering if anyone had an idea of a raw substitute for the rice? I'll be fasting the next few days and afterwards want to wean myself back to solid food by eating raw for a couple days. Any ideas would be appreciated! :-)


I just love it!!. I've also tried  bulgur instead of rice and it turned out great


It's now our happy sandwich as well!! We used pine nuts instead of sunflower seeds and lettuce instead of sprouts, we also softened  the onion and garlic a bit before adding it to the mixture  and it was fantastic!


this was delicious!! i didn't have any tomato, so i used red pepper instead, and i threw the onion, garlic & (portobello) mushroom in a frying pan for a quick saute. this is so yummy and something i will definitely make again!  ;D


Yummy!  I didn't use any alfalfa sprouts or sunflower seeds in mine but it turned out to be delicious!  My girlfriend tried it and loved it just as much.  I love how little time it took to prepare too; I'm probably going to be making this all the time!
