My Super Duper Moist Banana Bread

What you need: 

2 1/2 cups whole wheat flour/bread flour
1/2 cup oat flour
1/2 cup turbinado sugar
1 1/2 tablespoons egg replacer powder (do not pre mix)
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
6-8 bananas, pureed
2 cups pure maple syrup (brown rice or agave works too)
1/2 teaspoon vanilla
1/2 cup nondairy milk
1/4 cup oil
1 cup pecans, dates, raisins, chocolate chips, or walnuts, optional

What you do: 

1. Preheat oven to 350 degrees F. Lightly oil or line 2 loaf pans with foil. In a bowl, combine dry ingredients and blend thoroughly.
2. In a second bowl, combine all wet ingredients and blend with a mixer to remove any lumps. Combine wet/dry ingredients until just mixed; the batter will be slightly lumpy.
3. Add any optional goodies to batter and fold in. Pour into prepared loaf pans and bake 45 minutes or longer until toothpick inserted into the center comes out clean.
So easy.

SO HOW'D IT GO?

I just made this and it turned out great.  Made a couple of changes though.  First, I didn't puree the bananas.  Just smooshed them really good with a potato masher.  I used coconut flour instead of oat flour and coconut milk and coconut oil.  I only used 1 cup of agave instead of 2.  And I think I used whole wheat pastry flour....although it may have been white whole wheat flour.  Not sure what I had in my canister.  I also added a couple pinches of cardamom.  Cooked the loaves for about 55 minutes and they came out perfect!  Thanks!  I'm also trying to upload a picture but it's not working.  :-(

I rescued about 8super brown bananas from work and decided to make banana bread. I chose this recipe and....this bread is awesome!
i made it omitting any sugar (granulated+maple syrup), baking powder, and oat flour. I add add about 1/2cup of oats+ walnuts +cinnamon. Made this for my stepmum for mother's day, and I'm sure she'll love it, too! Not only was this a simple recipe, but it comes out amazingly.

This went horrible wrong for me. I have NO idea what happened other than a freak incident with the oven. I baked it for 45 min., checked it and thought it was done, but when I cut into it, it clearly was not. I baked it for an additional 30-40min., and am still not entirely sure that it's cooked all the way through. .....?

I also forgot to add in the maple syrup and subbed applesauce for the oil, but none of that should have been an issue. My husband ate a mostly-cooked piece of the end, and said it tasted great regardless...

I didn't have a loaf tin, so I made it into muffins! I didn't change anything, except that I baked them for around half an hour instead of the full 45 mins. They were crispy on the outside and deliciously moist inside. This recipe makes a huge number of muffins - at least 30. A huge hit with my family and friends!

Wow, it came out very well. Execpt I didn't follow this recipe very closely. I couldn't find any turbinado sugar so I used regular sugar and I used white flour because I couldn't find any oat flour at the store. Still, it was very moist and very good. I also used half the ingreedients because I only wanted one loaf. I would have taken a picture and posted it here but we ate it too quickly.  :)
