Namibia Greens

What you need: 

1-2 large cloves garlic, minced
1/2-1 onion, chopped
1 large bunch mustard greens, chopped
1 can diced tomatoes, drained
olive oil
salt and pepper to taste

What you do: 

1) Saute garlic and onion in olive oil until soft. Add greens, salt, and pepper until wilted. Add tomatoes and cook until greens are desired softness. Enjoy served over polenta.
Source of recipe: My neighbor from Namibia, Africa brought a dish over made with greens and served it over something very similar to polenta. This is my take on her homeland dish.

I love mustard and collard greens,  gonna have to try this.

It's also great when you add some all-purpose seasoning or dry veggie bullion and about a tablespoon of creamy peanut butter. That's the way I learned to make it in Botswana. We at it all the time over paleche (PAH-lay-chay), also known as papa, which is like polenta but a bit stiffer.
