Nancy's Banana Muffins

What you need: 

1 1/2 cups flour
1/3 cup vegan margarine
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 mashed bananas
1 egg substitute (flax seed powder, tofu, applesauce, etc...)

What you do: 

Mix all ingredients well in a medium sized bowl. This recipe is no-fail, so it doesn't matter what goes in when.
Bake in the oven at 375 degrees Fahrenheit for 20-25 minutes.
As well, you can make this into a loaf, or add chocolate chips if you want!
(This recipe is from my mom's friend, but I veganised it, and the muffins are amazing.)

SO HOW'D IT GO?

These were very yummy, and I don't usually like muffins! I had two extremely ripe bananas and didn't want them to go to waste. I added about half a tbs of vanilla, chopped almonds, and raisins, and I sprinkled brown sugar on top. I didn't have baking powder, only baking soda, but it worked just fine without!

OMG. You weren't kidding about no fail. I botched the recipe in nearly every way possible. Had extra bananas so decided to double the recipe, but ONLY doubled the bananas. I used whole wheat flour (I have an amazing source of super moist local organic stuff), only added an extra half cup of it, and forgot the margarine entirely. They were still delicious and awesome!! The walnut crumbs and date chunks helped but it's a keeper fer sure! Thanks!

I just mixed these up in about 5 minutes!  I used Energy egg replacer and added 1 tsp of vanilla.  I baked them in muffin top pansfor about 13 min. and sprinkled coarse sugar on top.  DELICIOUS!!  The special characteristic about these muffins is that they are LIGHT AND FLUFFY!  This is a keeper!

I made these muffins last night and they were really good. For the egg substitute, I used EnerG egg replacer which worked well. They came out nice and moist. My roommates all had some and none even noticed that they were vegan! I only have one left! Oh no!
