Nialee's Garlic Lovers Fries

What you need: 

2-3 large russet potatoes, peeled and cut into French fries
2 tablespoons olive oil, divided
1 whole garlic head, peeled
1 tablespoon parsley
1/2 teaspoon dried thyme
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon chili powder, optional
1/8 teaspoon black pepper
1 teaspoon salt

What you do: 

1. Preheat oven to 450 degrees Fahrenheit. Toss 1 tablespoon olive oil with fries, line fries on cookie sheet single layer and bake for 30-35 minutes.
2. Place garlic, parsley, thyme, cumin, paprika, salt, black pepper, and remaining olive oil in a food processor and chop a few times. If you do not have a food processor you can also chop finely by hand and mix it all together.
3. Pour all the fries into a bowl with the garlic paste mix and toss it all together. Place the fries back onto the cookie sheet and bake for another 10-15 minutes.

SO HOW'D IT GO?

These were absolutely delicious! I'm embarrassed to admit that I ate the whole pan, and only that, for dinner.
I don't have a food processor so I chopped the garlic very fine, added coarse salt and a little olive oil and crushed it into a paste. It worked really well. I didn't have any parsley so I omitted it. They were great without it.  So yummy!

these were pretty good.  I just mixed the chopped garlic together with the other ingredients, rather than use a food processor, and so i didn't get a much of "paste" and somehow the final product was a bit too dry (maybe I overcooked them) .  they were not as good as other garlic fries i have had in the past, but still really good.

Don't hate me, but I didn't like these as much as I had hoped. The garlicy mixture with that ton of spices seemed like it would rock, but ultimately it still didn't have much flavor. Maybe I should have eaten them with veganaise rather thank ketchup - which is what I normally do, but didn't for some reason. I'll have to try them again...

Wow. These were delicious. I used fresh cilantro instead of parsley because its what I had in the fridge, and it worked great. So garlicky and delectable! We ate them with Hot-Sauce Glazed Tempeh (from Veganomicon) and a green salad, and were very pleased with how all the elements of the meal came together. We'll definitely be making these fries again!

;)b  My family loves these! We have been making them for quite some time and I just now realized I never left a review. I am so surprised there arent more reviews! It is very important to follow the recipe to the T. I made the mistake once, to try and take an easy route by adding all the spices before the first bake time, do not do this...the flavor will be lost if you do! Thank you for this awesome recipe, it reminds me alot like the potato wedges I use to buy at sams club or costco, but now I can have them when I want, for alot less $$!

Mmmm. We love all kinds of roasted potatoes, and these are good! I used several huge cloves of garlic, lots of red chili flakes, cumin, salt, pepper, and parsley. A great way to do it!
