Nice Red Lentil Soup

What you need: 

2 cups of red lentils
enough water to cover them twice
1 medium onion
1 large carrot
1/2 bulb garlic
1 medium potato
1 stalk of celery
1/2 a pepper
1 leek
1/4 cup cilantro
green onions for garnish
1 tablespoon ground cumin
4 teaspoons sea salt
1 teaspoon black pepper

What you do: 

Put the red lentils in large pot to boil with bay leaf and water. Stir often. Boil down till lentils are soft.
Chop the potato and carrot into small cubes. Very finely chop the onions, celery, pepper and leek.
In frying pan pour in some olive oil, add the ground cumin (which you have previously roasted) and the pressed garlic. Stir fry till golden brown.
Add the onions, celery pepper & leek till slightly caramelized.
Put this mix into the lentils and water. Add the potato and carrot. Cover and let simmer for about 30 minutes.
Near the end add chopped cilantro, sea salt and pepper. Simmer for a couple of minutes more and turn off.
Use chopped green onions to garnish!...

SO HOW'D IT GO?

Delicious!  I was a little worried with the only seasonings being the bay leaf, cumin, salt, and pepper, but this was absolutely fantastic.  Easy to make and great for a cold day.

I really enjoyed this soup.  However, I must admit I have a weakness for red lentils.  If those little gems are even remotely involved in the dish, I'm totally there.

This is a very good soup if you use half the salt and half the pepper called for in the recipe.  Luckily, I did.  And it came out great!  Easy too.  This soup would make a very nice starter to an Indian meal.  Thank you RedFlower.  I'll absolutely make this again!  :)

I decided to use this recipe for my first time making lentils. It's awesome. I actually added a small zucchini (sliced) and changed the seasonings a bit. I just wasn't in the mood for cumin and I don't like cilantro. I added a tablespoon of tarragon, a teaspoon of Spike, and a teaspoon of rosemary. It's a very fragrant soup, and I'll try this again with cumin when I'm "in the mood" for it!

This was truly delicious! I had already made something else for dinner tonight, but decided to make this after, since I wanted to use the cilantro right today. I had it for dessert, it was so good! It was a bit saltier than I would normally make something like this, so would recommend maybe 1/2 the salt to those who would rather not have too much salt in their diet.

Yeh...I think less is good too...i like to put tamari in at the very end actually.  Thanks..I'll be more watchful with my salt from now on! hehehhe... :o

Oops. I meant to ask whether you certainly meant 1/2 bulb of garlic or 1/2 clove.....

  Hello Tom...Well you see a bulb of garlic is the whole conglomerate of cloves.  So yeah, about a half of a bulb is quite good (thats if you like garlic alot!) ok...cool.  :D

It looks really tasty, Redflower! My question is, did you mean to add an entire bulb of garlic, or just a clove? Since there is such a big difference, I wouldn't want to make a mistake when I first make it!
